Stinging Nettles

Different Recipes For Stinging Nettles 


Stinging nettles are a delicious and nutritious wild edible, and there are so many ways to prepare them! Here are some of my favorite recipes:


  • Stinging Nettle Pesto: Blend together 2 cups of lightly cooked stinging nettles, 1/4 cup extra virgin olive oil, 1/2 cup of freshly grated Parmesan cheese, 2 cloves of garlic, 1/4 cup of toasted walnuts, and 2 tablespoons of freshly squeezed lemon juice. Serve over cooked pasta or enjoy as a dip. 


  • Stinging Nettle Risotto: Heat 2 tablespoons of olive oil over medium heat in a large pot. Add 1 diced onion, 2 cloves of minced garlic, and 1/2 cup of diced mushrooms. Cook until vegetables are softened, about 5 minutes. Add 1 cup of Arborio rice and stir until coated with the oil. Add 4 cups of chicken broth, 1 cup of lightly cooked stinging nettles, and 1/2 cup of Parmesan cheese. Simmer, stirring frequently, until the rice is tender and most of the liquid has been absorbed, about 20 minutes. 


  • Stinging Nettle Soup: Heat 2 tablespoons of olive oil in a large pot over medium heat. Add 1 diced onion, 2 cloves of minced garlic, and 1/2 teaspoon of ground cumin. Cook until the vegetables are softened, about 5 minutes. Add 4 cups of vegetable broth, 1 cup of diced potatoes, 1 cup of lightly cooked stinging nettles, 1/4 teaspoon of salt, and 1/4 teaspoon of freshly ground black pepper. Bring to a boil, reduce the heat, and simmer for 15 minutes. Blend the soup with an immersion blender until smooth. Enjoy!
